However, I could not get past of the sheer caloric and fat density - one serving is just 2 tablespoons and packs 100 calories and 8 grams of fat. I get it that evaporated milk is high calorie in general, but this is even beyond that. But the product is delicious, albeit unhealthy.

I also like that ingredients are simple: water, coconut, and guar gum. I can appreciate that I can pronounce all the ingredients and that there is not a long list of additives. Being organic, non-GMO, gluten-free, and dairy-free are also all benefits. I used its for a sauce and it definitely worked well for me and my recipe. I would say that it is slightly less creamy and thinner than the regular fat coconut milk which takes away from the richness and thickness. Overall, it's a good option if you're seeking a lighter alternative, still want coconut flavor, and don't need super rich/creamy textures ( e.g. in soups, lighter sauces, smoothies) I think it would be less ideal if you're making something where richness is important (e.g. curries or coconut desserts).

You still get a silky consistency that is also creamy. It's not at all overly watery which can happen sometimes when people try to lighten up a product. I couldn't taste a difference when I used it in my curry recipe. Would definitely recommend using this, especially those looking out for a great product that has less fat and calories.
