Filled With Flavor
Flavor is my favorite Ottolenghi book yet. His books are always filled with fresh, innovative ideas around cooking vegetable and this one takes the interesting approach at looking at them through three key elements- process, pairing and produce. Chapters explains what’s involved in each of these elements—process includes charring and browning, pairing includes sweetness and acidity, produce includes mushrooms, nuts and seed and included with each are amazing recipes that highlight each of these categories. One of my favorite parts of the book explains the 20 ingredients that speak to the flavors found throughout the book. I love a cookbook that takes me beyond just the recipes and helps me understand the thinking behind them. Well written and beautifully photographed, this book makes a great gift for serious cooks who love bold flavors and vegetables.
