I enjoyed it.
[This review was collected as part of a promotion.] I really like enchiladas and Latin flavors for lunch. I feel like beans are very filling for a mid day meal, so was excited to try this. The corn meal have a nice sweetness to the dish, which was not overly salty or acidic from the tomatoes and beans. I like how everything worked well together.

Delicious and satisfying
[This review was collected as part of a promotion.] This is my absolute favorite bowls from Amy's Kitchen. The tortilla casserole is so cheesy and good. I also love the accompanying black beans that comes it. It's the perfect afternoon lunch that is light and satisfying. It doesn't have any meat so it's for days when I don't feel like eating meat. It smells so good when microwaved and I like to put it in the toaster oven for a little bit to give it that yummy crust.

[This review was collected as part of a promotion.] This is a delicious microwave meal! While it doesn’t look super appetizing in my photo- it smells and tastes great! The tortilla casserole was a pleasant surprise- it reminded me of an enchilada without sauce and the black beans were just the right consistency to me! I paired this with some left over chicken thighs and was very satisfied. This would also work without the added food depending on your appetite and meal goals.

It smelled amazing when It was done cooking and tasted just as great! Perfect blend of flavors with the tomatoes, beans, and the enchiladas flavor

Tortilla Casserole w/ Bl Beans was awful.
10-26-2025: Love Amy's products, but this Tortilla Casserole was NOT good. The base of the casserole was a soggy, and tasteless corn chip layer. This one was NOT up to the usual high standards of Amy's. I feel ripped off because all of Amy's products are expensive and I expect more. I'd like my money back.

I love Amy's gluten free frozen bowls. They've been keeping me alive with easy gluten free options that fit my busy college schedule. I wanted to try something different and bought this. awful. The beans were wet in all the wrong ways, the casserole was flavorless and the texture was super unpleasant. also, no spice at all. now I am awake at 2am with horrible stomach cramps and nausea. skip this one and pick out a mac n cheese bow instead.

The portion amount is perfect and filling. The tortilla in the casserole is a little bit mushy but tasted good. The black beans tasted good as well.
